Yuzi Tofu

Soak a section of casing in warm water for ten minutes. Four eggs, a mineral water bottle, cut it off the waist for a while, and use the end with the mouth as a funnel.

Wash the casing gently to remove the salt, put one end on the tap, turn on the switch, and let the water flow into the casing, so that the inside and outside of the casing are rinsed clean.

Beat the eggs into a bowl and stir, add an appropriate amount of salt, (add a spoonful and a half to make it a bit lighter), thirteen incense, pepper, and chili powder according to your preferences. Add a little cooking wine, mix well and set aside. The small rope in the corner of the picture is used to tie a knot for a while.

Tie one end of the casing with a rope, and gently put the other end on the mouth of the mineral water bottle. Lower the self-made funnel, don’t mention it too high, and then you can pour the egg liquid into it. This process can’t be done. .

After filling the egg liquid, do not pick up the funnel, exhaust air outward, and then tie it with a small rope. Some bubbles can be seen on the picture. It might be better if you sift the egg liquid with a filter. Don't fill it too full, it will swell when cooked. Clean the outer surface a little bit, some stick to the oil film, gently, don't break it.

You can fasten it a few more times. It's too soft for fear of breaking, so it's not fastened. Put cold water into the pot, the water has covered the egg intestines, and boil on medium to low heat, and it will be cooked in about ten minutes. The best thing to do for the first time is to see if you don't boil it. Use a toothpick to stick it in and out, and it will be cooked if there is no liquid flowing out.

After cooking, there will be a very thick egg, which is quite soft, with some foam. Clean the outer surface and let it cool. After letting cool, peel off the skin and cut into sections. The inside is very delicate. Adding black pepper is black pepper jade, you can add any seasoning for any taste you like. It can be sliced to make soup without removing the skin, and sliced into soup with a blade to cook the soup is a Nanping snack-Shuangqian Danru.

This recipe comes with a method of making Songhua egg sausage. 2, 3 eggs with a Songhua egg, the composition on the picture is too strong. The seasoning is mainly salt, and other materials can be prepared according to your taste.

Cut the pineapple eggs into slices or strips, the size of which can pass through the funnel.

Add seasonings to the eggs, stir well and pour in the Songhua egg slices. The filling and cooking process is the same as above, mainly preventing leakage when filling and explosion-proof when cooking.

The finished product is served on the plate. Because the pine flower has a strong flavor, it is delicious with some vinegar and ginger sauce.
Tips:
1. Don't fill the egg pouring liquid too full, it must be exhausted, or it is not easy to burst, and there will be bubbles in the egg intestines after they are cooked.
2. It must not be boiled (steamed) on high fire, it will burst. Just cook it, don't take too long, or it will get old and the inside will not be delicate.
3. Starch can be added or not, if you add chili powder, it is best to put starch.
