Boiled Broth

What I bought was plum meat, which was lean and tender, because there was a baby to eat, so I didn’t choose fat, so I chopped the cleaned meat first, and prepared the green onion and ginger.

Add the right amount of salt. I added the salt in place here. I won’t add salt in the soup later. Add a spoonful of raw extract for fresh and two teaspoons of dark soy sauce. The role of dark soy here is to make the soup. The color of the meat is better. Add five or six drops of vinegar. The vinegar can remove fishy and make the meat tender. After adding the seasoning, use clean hands to grasp and pinch evenly.

Add the right amount of starch, I just grab a handful, I use the sweet potato flour processed by our hometown, and then grab it evenly and set aside.

Add shredded ginger and scallion to the pot and a little cooking oil (if there is lard, it will be more fragrant). We don’t usually eat lard, so we eat the oil directly. If you have a baby, you can add an appropriate amount of baby cooking oil after it is done. Cover the fire to boil.

Use chopsticks or directly use clean hands to put the prepared meat into the pot a little bit, then boil on high heat, pay attention, after boiling, be sure to boil for a few more minutes, so that the meat will not have a residual smell , (If you want to add some greens, tomatoes, etc., the greens can be slipped down in the pan first, and then put them together after the meat is cooked, and the tomatoes can be brought to a boil when the water is boiled before adding the meat).

Beat the eggs and stir well. After boiling, boil for a few minutes, then add them to the pot and bring to a boil.

Finally, sprinkle with chopped green onion and you can start the pot (the baby is over one year old, so we don’t add chicken essence and MSG to our diet, but this also preserves the umami taste of the meat. There are fresh extracts in the front, and I am used to eating chicken essence or MSG. For seasoning, add a little chicken essence to taste before adding eggs).
