Braised Eggplant

Wash the eggplant and cut it for later use.

Put an appropriate amount of oil in the pot, and when the oil is heated to a high temperature (green smoke), pour in the cut eggplant and fry it until it turns yellow.

Put a little oil in the pot, add watercress, ginger and garlic, stir fry until fragrant, add a little water, and boil the fried eggplant.

Stir evenly and simmer for a few minutes, then add a little soy sauce, MSG, and salt to start the pot.
Tips:
The Zaba Haijiao is fried by myself at home without any problems. I will pass on this preparation method the next day. When making braised dishes, you can add a little bit of the base to make it more fragrant. The photos really don’t look good. I don’t have any green onions at home. Otherwise, it’s better to sprinkle a few green onions and take photos.
