Braised Noodles with Beans

Dosage instructions: 3 small potatoes, 1 small cabbage, 1 handful of beans (you can have more), bacon is as big as a fist, enough for two adults and one child. Vegetables are not added except for beans, and bacon can be replaced with fresh pork.

Wash the ingredients, find a helper to help break the beans, the size is shown in the figure.

The potatoes are broken into small pieces for a better taste. If it is too much trouble, beans, cabbage, potatoes can all be cut with a knife. But don't wash it again.

Cut the lean bacon into slices, cut the fat into cubes (for boiling oil), peel the whole garlic, and cut the shallots into small sections.

Pour oil in a hot pan, boil the diced pork on a low heat, boil until the fat becomes transparent, add the sliced bacon and stir fry. Add half a spoon of soy sauce midway.

Add garlic, fry the garlic fragrant, then add the beans, stir-fry on high heat until the skin is dehydrated (a little wrinkled), add half a spoon of salt, and stir fry. (Because the bacon is very salty, soy sauce is added, so the amount of salt should be reduced)

Add potatoes and stir fry. Add 10 grams of light soy sauce (I am a 5 gram measuring spoon), a small amount of sugar for freshness, and continue to stir fry for color.

The heating water is half a finger height higher than the dish, and the amount of water is half the height of the dish. (You have to heat the water for the vegetables and the noodles to be cooked together)

With hot water on fire, the soup will soon boil, and you can spread the noodles.

Finally cover the cabbage. It is better if the broth is just dipped into the noodles. Cover the pot and simmer on medium heat for eight minutes.

When the soup dries quickly, you can see that the noodles are still raw, add half a bowl of water, and use chopsticks to mix the noodles and vegetables evenly. Add 10 grams of extremely fresh, appropriate amount of chicken essence, chili noodles, and sprinkle with chopped green onions. Cover the pot and simmer on high heat for 3 minutes.

Drain the soup, stir-fry evenly, and serve!
Tips:
1. This kind of wide dried noodles takes a little longer to cook than raw noodles. The first time the water is heated, if the soup is simmered and raw, you can add water and simmer until cooked. But don't add a lot of water at once, it will be rotten after cooking.
