Families in the north seem to be particularly fond of this noodle dish. There are meat and vegetables. The ingredients do not need to be informal and can be adjusted according to their own preferences. A slightly more delicate mix of two cold dishes with a pot of soup, a pot of stewed noodles that are too lazy to do it can solve a meal. Vegetables and meat are complete with carbohydrates and nutrition. There are no special requirements for the selection of ingredients for the stewed noodles, and the vegan ones with meat are delicious. Vegetables generally use potatoes, beans, cabbage, and tomatoes. I sometimes add sweet potatoes, corn, and pumpkin to braise, which are also very delicious. For meat, pork ribs, pork belly steak, sirloin and chicken are all fine. Therefore, braised noodles are particularly extensible, and you can choose the ingredients according to your preferences. "

Braised Noodles with Pork and Beans

1. Pork belly (the fat and lean meat I used) sliced and marinated with salt, cooking wine and starch

2. Wash the beans, remove the old silk, and pinch the segments by hand.

3. Peel the potatoes, wash and cut into strips, and shred the cabbage.

4. Pour oil in the pan, slightly more than usual for cooking. After the oil is hot, add the drained potato chips and fry until the surface of the potato chips is crispy

5. Remove the fried potato chips to control oil

6. Use the remaining oil after oiling the potatoes, fry the fragrant pepper, remove it. Then add star anise, dried chili, chopped green onion, sliced ginger, and minced garlic to sauté the pot. The amount of oil is about the amount of cooking, or slightly more

7. Add the marinated pork belly and stir fry.

8. Cook into the cooking wine, stir fry and cook into the dark soy sauce to evenly color.

9. Pour in the snap beans and stir fry.

10. Add a spoonful of tomato paste and stir well.

11. Adding water just overwhelmed the ingredients.

12. After boiling over high heat, add appropriate amount of light soy sauce and sugar.

13. Season with salt.

14. Add half a teaspoon of five-spice powder.

15. Add cabbage.

16. Add the fried potato chips.

17. At this time, turn the heat down, spread the fresh noodles evenly on the top of the dish, don't turn it, let the dish bottom. Don't let the soup overwhelm the noodles.

18. After seven minutes, open the lid and carefully turn the noodles with chopsticks. Turn the side that has not touched the vegetables to the bottom, and continue to simmer for 5 minutes. The time should be controlled by yourself, because the ingredients are basically cooked at this time, so it should be based on the amount of water. How much determines how long to simmer.

19. Simmer until the soup is almost dry, add in the minced raw garlic and sesame oil.

20. Change the high heat, quickly stir the bottom vegetables and the top noodles evenly, at this time the soup is dry but the noodles and ingredients are moist

21. Bowl

22. Let's eat~

Tips:

1. If you use pork chops and steaks to braise, first blanch the pork chops or steaks in water, then fry them until they are colored and add more water. First, simmer the meat until it is ripe and add the beans and other vegetables. The next steps are the same.

2. Don't forget the minced garlic before serving, it is definitely the finishing touch

3. Use prickly ash oil as the base oil to increase the flavor

4. Be sure to use fresh noodles, never use dried noodles or cook the noodles first

5. Cabbage can be omitted, but adding cabbage has a better taste than noodles, and it also increases the amount of vegetables, which can kill two birds with one stone

6. The thickness of the noodles can be adjusted according to your preferences
