Braised Rice with Mushroom and Bacon

Prepare all the ingredients. The bacon is frozen in the refrigerator and must be taken out in advance to thaw. Dried shiitake mushrooms should be soaked in cold water in advance until soft.

After washing the carrots, peel off the skin and cut them into fine granules with a knife. The soaked shiitake mushrooms are squeezed out of the water, and then cut into small cubes. The bacon is also cut into strips with a knife.

Heat the wok, add a spoonful of cooking oil, after the oil is hot, put the bacon in the pan, stir-fry the bacon on medium and small heat until the bacon turns color and becomes oily.

Put the carrot cubes into the pot and stir-fry evenly so that the carrots absorb the fat of the bacon.

Then put the diced shiitake mushrooms in the pot and stir-fry until the moisture in the shiitake mushrooms is dry.

Add appropriate amount of light soy sauce, cooking wine and a little salt to the pot, stir-fry evenly, and serve. The side dishes should be simmered together with the rice. The salt can be a little bit more, and the side dishes will taste slightly saltier than usual stir-fry.

Wash the rice, drain the water, and pour it into the inner pot of the rice cooker.

Then pour the fried carrots, mushrooms and bacon all into the rice cooker.

Add an appropriate amount of water to the rice cooker. The amount of water should not be too much, just a little less than the usual cooking water. The cooked rice will be more granular and taste better.

Connect the rice cooker to the power, cook the rice, mix the cooked rice well, and sprinkle a little green onion to start eating.
Tips:
1. Bacon can be replaced with sausages, ribs, etc. according to personal preference, and side dishes can also be freely chosen according to the taste of the family, such as potatoes, green beans, corn and so on.
2. The rice can be replaced with half rice and half glutinous rice. The cooked rice is more delicious.
