Braised Taro Pseudo Mushrooms

Do not wash the betel nut taro, do not dip it in water, and peel it when it is dry, so that it will not cause itchy hands. Rinse the peeled taro, slice it and put it in a steamer, and steam it on high heat for 15 minutes until fully cooked.

Take out the steamed taro and mash it with a spoon while it is hot.

Pour in potato starch in portions.

First use chopsticks to mix it well, and then knead it into a dough that does not stick to your hands.

Slightly knead the dough into a strip, pull off a short section, squeeze a few times in the palm of the hand, squeeze it tightly, and place it in the palm of the hand. Knead it into a ball with both hands.

You can find a bottle, beer bottle or cooking wine bottle. I use a red wine bottle. Put the potato ball on the mouth of the bottle and slowly press down with your hands.

Take it down and it is a small mushroom, and the mouth of the bottle can be coated with some oil, which is easy to operate.

After all the small balls are done, put them in a steamer with oil, a pot with cold water, and steam for about 15 minutes on high heat.

When steaming the small mushrooms, we can prepare other side dishes, wash the green and red peppers, remove the seeds after everything is done, and then cut into small pieces, cut the coriander into sections, and mince the garlic.

Tips:
Many people will experience itchy hands when handling taro. In fact, they will not be itchy as long as the taro is dried. Remove the skin of the taro and rinse it again. It will not cause itchy hands.
Taro try to choose the waxy Lipu taro, which is bigger, don't use small taro. The ratio of flour to taro is about 1:1. Because the water content of taro is different, the flour should be added in batches. If the dough is too dry in the pot, you can add a little water to help the dough shape. If the dough is slightly dry, the balls will be better. Better shape.
