Cabbage Balls and Vermicelli Soup

The raw materials are shown in the picture. After the meat filling is adjusted, 30 balls are squeezed, and only half of the filling is used. I didn’t use the fans. I used a bag of crystal powder, which may be packaged in 200 grams. It is more resistant to cooking and tastes better than the fans, but I forgot to take the crystal powder.

Add salt, soy sauce, thirteen spices, pepper, and a tablespoon if you have oyster sauce. I don’t have it at home, so I didn’t put it this time.

Don't move the balls after putting them in the pot, turn on medium heat. This time I squeezed 30, leaving half of the meat.

When the balls float up, turn on high heat, use a large spoon to skim the froth, cover the pot and cook for five minutes. Taste the saltiness of the soup. This time I put more salt and it tasted just right. There is no need to add salt. If there is less salt in the balls, the soup will be very light at this time. You can add more salt.

Add the crystal powder and cook for five minutes, then add the cabbage, and cook for another five minutes. It is almost done. You can also taste the crystal powder to make sure it is good.

Put a little pepper and vinegar in the soup bowl to enhance the flavor. One spoonful of vinegar is enough, just the small spoon used for making meatballs. You can also chop some minced garlic or parsley to increase freshness.
Tips:
1. Whether the minced meat is clockwise or counterclockwise, it must be stirred in one direction.
2. The meat filling can be made into a pill without adding egg white and starch. The egg white is easy to float in the water with a layer of egg foam. The stuffing with more meat and less meat can also be made into a pill without adding starch.
3. The meatballs must be turned on a small fire when they are in the pot, do not stir them in the water, or they will easily disperse.
4. If the meat is cut and minced by yourself, the balls will be more elastic.
5. When it comes out of the pot, put the scented coriander or something, and the scent will disappear when it is put in early.
