Carrot Rice

Prepare the ingredients

Rinse the dried sea oysters, dried sea rainbow, dried scallops, dried shrimps, and pearl mushrooms. Then pour in water and soak for 40 minutes. Wash and slice the shallots, 1 slice of ginger and mince, chopped chives, peeled and sliced white radish. Bite-sized hob block

Rinse the pork belly and put it in a soup pot, add water that can be used for the meat, add 2 slices of ginger, soy sauce, boil on high heat, skim the froth, turn to medium heat and cook for about 25 minutes

After continuing to fry the aroma, pour in water, add the abalone juice, stir well, turn to low heat, cover and simmer for about 20 minutes

After the rice is cooked, pour 20 ml of shallot ghee along the side of the pot, sprinkle with chopped shallots, and mix well.

Tips:
1. Don't throw away the water for soaking dried seafood, use this water directly into the rice, it will taste better;
2. Dried shiitake mushrooms are more flavorful. For large dried shiitake mushrooms, use more than 3;
3. If you like to eat fat, you'd better choose 8 points fat and 2 points lean pork belly, which is more fragrant;
4. The red onion has a more fragrant taste, and it is sold in the general vegetable market. In addition, you don’t need to use the leftover green onion here, but don’t throw it away. Put it in a stew or sprinkle it on cold dishes.
5. Add salt according to your own taste. Dried seafood has a salty taste. Be careful not to put too much salt.
