Celery and Peanuts

Remove the leaves and stems of celery and wash the carrots;

Wash the peanuts and soak for half an hour, or you can boil them without soaking;

Cut the celery into about 2 cm pieces, and the carrot into peanut-sized dices;

Chop the onion, ginger, and garlic into fines;

Put the peanuts in a small pot, add star anise, pepper, and salt to a high heat and boil on low heat for 5 minutes. If you don’t soak it in advance, cook it directly, you need to cook for about 20 minutes;

Take out the cooked peanuts and place them in the vegetable mixing bowl;

Put the celery and diced carrots in the pot for boiling peanuts and boil (about 2 minutes), turn off the heat and remove them and put them in the peanut mix vegetable bowl;

Add soy sauce, vinegar, five-spice powder, salt, green onion, ginger and garlic while it is hot and mix well;
9.
After cooling, add sesame oil and chili red oil and mix well.
Tips:
1. Peanuts can be peeled off after soaking, and the finished product will be more beautiful;
2. The boiled peanuts and celery and carrots blanched in hot water do not use cold water, and the seasoning is more delicious when it is hot;
3. The prepared mixed vegetables can be stored in the refrigerator to make them more refreshing.
