Cold Potato Chips

Wash and peel the potatoes, cut into 1 mm thick slices

Soak the cut potato chips in clean water to wash off the starch on the surface to maintain the taste

Shallots cut into chopped green onions

Boil water in a pot and blanch the cut potato chips for 2~3 minutes
5.
Take out the blanched potato chips and soak them in cold water to make the potato chips more crispy and tender.

Add 2 tablespoons of rice vinegar, 1 tablespoon of chili oil, 1 tablespoon of light soy sauce, 1/2 tablespoon of salt, a little sugar and chopped green onion to the blanched potato chips
