Wash the kidneys, pour some white vinegar in water, and soak the kidneys for 5 minutes to help remove the fishy.

Wash the soaked kidneys again, cut them into strips, add water to the pot, add the ingredients other than the white wine, pour the white wine after the water is boiled, pour the kidneys, and then heat the kidneys.

Pick up the cooked kidneys and soak them in ice water for a few minutes.

The jelly is washed and processed into strips.

Prepare the seasoning you like.

Prepare the minced garlic, fry it in hot oil and set aside.

Wash mint leaves and chop them into fine pieces.

Tips:
1. I bought the kidneys and processed them, so it is relatively simple. If you buy the whole kidneys, you must remove the white fascia inside the pork waist.
2. Soak the boiled kidneys in ice to make the kidneys taste better and crisper.
