Diced Eggplant Noodles
1.
Pork cuts the lean and fatty meats into fine slices.
2.
Put a small amount of oil in the pot and add fat to burn.
3.
Marinate the lean meat with cooking wine, a little starch, and some salad oil for a few minutes.
4.
Fry most of the fat.
5.
Pour the marinated lean meat and stir fry with the fat, until the lean meat changes color.
6.
Add appropriate amount of bean paste, light soy sauce, dark soy sauce, and two teaspoons of sugar and stir fry a few times.
7.
Add a small amount of water and boil slowly over medium and small fire.
8.
This is the homemade pickled garlic cloves.
9.
After simmering for a few minutes, add the pickled garlic cloves.
10.
When there is a small amount of water left, add a small amount of monosodium glutamate and appropriate amount of sesame oil to cook.
11.
The fried sauce is ready. If you don’t like diced eggplants, the noodles are also very delicious.
12.
Dice the eggplant.
13.
Put a small amount of oil in the pot and add the diced eggplant.
14.
Stir-fry until the diced eggplant is cooked.
15.
Add the boiled meat sauce and fry a few more times.
16.
After the noodles are cooked, pass cold water, pass the cold water again, drain the water, pour the diced eggplant meat sauce, and mix well when eating. I also added some beef enchilada, which is a bit spicy but not very spicy. (You can also add your favorite vegetables such as cucumber, carrot, bean sprouts, peanuts, etc. to the noodles.)
