Every year, my friends in Shaoxing, Zhejiang send me their own dried plums. The homemade plums are good and taste very fragrant. I especially like the dry aroma of dried plums. After soaking, they are braised with peanuts and diced meat, and they are all cooked after cooking. The juice is absorbed by the dried plums, it looks dry, and the mouthful of fresh fragrant juice is great. In the spring season, some dried plums are good to nourish the stomach and protect the stomach.

Diced Peanuts with Dried Plums and Vegetables

1. Prepare ingredients

2. Soak the dried plums in water

3. After soaking, rinse with warm water and squeeze dry water repeatedly.

4. Dice the pork and marinate for 2 hours with cooking wine, salt and cornstarch

5. Prepare ginger slices

6. Warm oil in hot pot

7. Pour in the diced pork and stir fry until the color changes and pick up

8. Save the base oil and add the ginger slices to sauté

9. Pour in dried plums and peanuts and stir fry until fragrant

10. Add soy sauce and dark soy sauce

11. Pour boiling water to immerse the food

12. Cover high heat to boil and turn to low heat for 20 minutes

13. Then add the diced meat, turn to high heat and turn to low heat, then cover and cook for 10 minutes

14. Add sugar and stir fry evenly

15. Add chicken essence and stir fry evenly, then turn off the heat

Tips:

1. After the dried plums are soaked, they should be washed repeatedly with warm water and squeezed to wash all the sourness inside;
2. The diced pork should be smashed and oiled, and the appropriate diced pork should be added at the end to have a fresh and tender taste;
3. Sugar should be added to this dish to improve the flavor and make it taste better.
