Dumplings with Cowpea Stuffing

First use a cook machine and a piece of white noodles

Then use a chef's machine and a piece of green noodles with matcha powder. Cover both pieces of dough with a damp cloth and wake up for 30 minutes.

Pick the cowpea and blanch it with boiling water for 2 minutes, then sub-cold water to control the moisture and chop finely.

Minced pork stuffing, then add green onion, ginger, light soy sauce, sesame oil, and MSG for whipping

Don't stir the chopped cowpea after adding it, add salt and stir well when you want to pack it

After the dough wakes up, first rub a piece of matcha powder into a long strip and roll it out

Place the long strips of white noodles on the matcha powder noodles and roll them up

Cut the ingredients, press and roll them into dumpling wrappers

Then use the method of squeezing dumplings to wrap the stuffing

The matcha powder I used is not green enough. Spinach juice would be better. I will try it next time.
