Eggplant Strips

Peel and wash the eggplant.

Cut into strips as long or short as you like. It is best to stir-fry after cutting the eggplant strips to avoid oxidation and discoloration.

Wash green peppers and red peppers and shred; peel garlic, wash and chop, peel ginger, wash and shred. Sauce: Take a small bowl, pour in appropriate amount of vinegar, light soy sauce, sugar, cooking wine, salt, starch according to your favorite taste and mix thoroughly.

Add the right amount of oil to the wok, slightly more than usual, and saute the five-spice powder, ginger and garlic.

Add eggplant strips and stir fry.

Stir fry until the eggplant strips become soft, add the clear and red peppers and stir fry.

Pour in the adjusted sweet and sour sauce.
8.
Stir-fry evenly and collect the juice.
9.
Take out the pan and serve.
