Eggplant with Garlic and Green Pepper

1. Wash the long eggplant, cut into thicker strips, add salt, marinate for a while, and kill the water;

2. Wash the green peppers and cut into shreds; wash the millet spicy and cut into circles;

3. Pour oil in a pot to heat, sauté the chopped green onion and half of the minced garlic, put the eggplant in the pot and stir fry;

4. Add green pepper shreds and stir fry;

5. Then add the spicy millet, add light soy sauce, oyster sauce, and sugar to taste; when the vegetables are cooked, sprinkle with minced garlic in the pan.
