Electric Baking Pan Version of Liangpi

Prepare the right amount of flour.

Add water to the flour to form flour flakes.
3.
Knead the dough into a dough and wake up for 30 minutes.

Add proper amount of water to the awake dough and start to knead the dough by hand.

Pour the kneaded dough into a bowl, continue to pour water and knead the dough, repeat this step three or four times.

Until the water is clear, our gluten is kneaded out.

Steam the kneaded gluten on the pot for 20 minutes.

The batter is allowed to stand for four or five hours to allow it to settle. Pour out the clear water on the deposited batter, leaving only the white batter.

The electric baking pan has the function of preheating the pancakes. Spoon a spoonful of batter and spread it out in 30 seconds. After taking it out, put it in cold water.

Apply a small amount of sesame oil to the cold water to prevent adhesion.
11.
Cut the prepared Liangpi into strips.
12.
Add in shredded cucumber, gluten, minced garlic, spicy soy sauce, light soy sauce, salt, vinegar, and sugar.
Tips:
Since I don't have a metal plate, I can only fry with an electric baking pan. If I choose the steaming method, the cold skin will be more chewy.
