On February 2, stir-fried Doudou. This is what I remembered as a child of "February 2". Basically every year my mother will stir-fry Doudou.
The customs may be different in different places. Some are fried soybeans and fried black beans, but Shaanxi people are super "noodle beans."
It’s very convenient to make a snack at noon. It’s delicious. I still have memories of the delicious noodles. I stir fry the fragrant noodle beans in the pot, and I instantly think of the cuteness of peas when I was a child. Look like

February 2, Fried Doudou-【chess Beans】

1. Prepare the ingredients

2. 500g of flour, two eggs, one teaspoon of five-spice powder, two teaspoons and a half of salt, about 50g of oil, knead into a flocculent shape, and then add crushed dried Chinese pepper oil

3. Slowly add water and make the dough become hard. It only needs to add about 150g of water.

4. Cover with plastic wrap and wake up for 30 minutes

5. Roll out into a chopstick-thick noodle

7. Use a knife to cut into small square pieces, chess pieces, and dry for about 15 minutes (so that they won’t stick after being put in the pot)

8. Heat the pot and pour it into the pot

10. The color changes slowly, half of my frying is in a pan, usually with an electric baking pan (electric baking pan is very convenient and fast, about 15 minutes, and the pan takes 20 minutes to go up)

11. Until it's golden and ripe

Tips:

1. The noodles should be hardened so that they are crispy

2. After the noodles are awake and cut evenly, let them dry for a while so that the skinned noodles will not stick.

3. It is recommended that everyone use an electric baking pan, which saves time and effort, and it is really exhausting to keep stirring in the wok.
