Fried Shrimps

1. Wash the prawns, cut off the hairs and legs, cut open from the back with a knife (do not cut), and take out the shrimp thread;
2. Put the processed prawns into a basin, add cooking wine, salt, and white pepper powder and submerge for 15 minutes;
3. One spoonful of sugar, two tablespoons of tomato sauce, one teaspoon of light soy sauce, one teaspoon of chicken powder, appropriate amount of salt, a few drops of sesame oil, and one tablespoon of water to make juice for later use;
4. Put oil in the pot and heat until 70% hot, add the submerged prawns, and fry them until they turn red and remove;

5. Start another pot, add a little oil to heat, add garlic slices and sauté until fragrant;
6. Pour the sauce and bring to a boil;
7. Pour in the fried prawns, stir-fry until the surface of each prawn is covered with sauce, turn on high heat to collect the sauce.
