Fungus Chicken Claypot Rice

Prepare the required materials.

The autumn fungus is soaked for 8 hours in advance, and then washed.

Wash the drumsticks, cut into pieces, slice the red dates, and cut the ginger into shreds.

Mix the net fungus, red dates, ginger and chicken thigh pieces, add salt, edible oil, sugar, chicken essence, and soy sauce, mix well and marinate for 20 minutes.

Wash the rice, pour it into a casserole, add appropriate amount of water, and boil on high heat, then turn to a low heat and cook.

Boil until the water starts to collect.

Add the marinated chicken, cover the pot and simmer for 10 minutes.

After 10 minutes, the chicken is almost cooked. Pour oil around the casserole and cook for about 3 minutes with the lid.

Sprinkle with chopped green onion after smelling the scent of rice and serve immediately.
Tips:
When cooking the rice, start to boil on high heat first, then turn to low heat and cook. Be sure to use low heat to prevent the rice from becoming uncooked and mushy. Pour a circle of oil on the side of the pot to burn the rice.
