Today I bake eggplants at home, and I bought chubby purple eggplants. Eggplants are rich in nutrients and contain protein, fat, carbohydrates, vitamins, calcium, phosphorus, iron and other nutrients. I want to talk a little bit here. I see that many people usually like to remove the eggplant skin when fried eggplant. In fact, eggplant skin is more nutritious than eggplant meat. Eggplant skin is rich in vitamin P, especially purple eggplant skin. Eggplant skin is rich in water-soluble vitamins—B vitamins, which can promote the synthesis of enzymes in the body and help the absorption of vitamin C. Eggplant peel is rich in rutin, which has the effect of lowering blood lipids and cholesterol. So we usually eat eggplant without peeling it. Closer to home, continue to talk about grilling eggplants. First brush the surface of the eggplants with a layer of oil and then put them in the oven to bake them. Then cut the eggplants with a knife and fill in the fried pork. The outside barbecue stalls usually just brush the sauce and minced garlic. For roasting, just put some minced meat and minced garlic, it is fragrant and fresh, and tastes better!
