Remove the scales and internal organs of one perch, rinse and set aside

After wiping the fish dry with water, use a flower knife, smear a proper amount of salt, sprinkle with pepper, peppercorns, and marinate for half an hour

Heat oil in a frying pan and fry the sea bass

After one side turns yellow and crusty, turn it over and continue frying. Fry it until both sides become crusty. Be patient when frying, don’t turn it over

Add a small bowl of water after the fish is fried

Add ginger slices, salt, light soy sauce, dark soy sauce, and oyster sauce after the water is boiled

Cook the fish on medium heat until the soup is almost dry. The leftover soup can be thickened with water starch. The green and red peppers can be used or not, just cut them for decoration.
Tips:
Fried fish requires patience, don't rush to turn it over.
