Home-style Hot and Sour Noodles

Soak the vermicelli in water for 1 hour in advance.

The pork is shredded.

Add the minced meat to the cooking wine, soy sauce, black pepper and starch, stir well and marinate for 15 minutes.

Chop the capers, soaked ginger, soaked chili, and scallion.

Pour the oil into the pot and heat it, add the white onion, ginger, garlic, and saute, add a spoonful of bean paste and sauté (if you like more spicy, you can add oily chili).

Pour in the minced meat and stir fry until the color changes and it is ready for use.

Leave the oil in the bottom of the pot, pour in the capers, soak ginger, soak the pepper and stir fry evenly.

Then pour in the fried meat and stir-fry evenly, add an appropriate amount of water (preferably broth).

After boiling, add the vermicelli and continue cooking.

Cook the vermicelli for about 3 to 5 minutes to soften.

Take a bowl and add some garlic, chili oil, balsamic vinegar (if you like the sourness, you can add some more, I personally like hemp, so I added a bit of pepper powder), soy sauce, and pour the cooked noodles into the bowl together with the soup .

Sprinkle with peanuts, soybeans, mustard greens, coriander, chopped green onion for decoration, top with sesame oil, a bowl of fragrant, delicious hot and sour powder is complete.
