Scratch the head and the tail to draw the fishy line; make a few slashes on both sides of the fish body at an angle!

The pot is 60% hot, pour the oil (more); fry the fish; 2 minutes later, add the green onion, ginger, garlic and chili (turn it over the side); add water over the fish, add all the auxiliary ingredients (oil consumption, cooking wine, Liquor (a few drops), light soy sauce, soy sauce, vinegar, sugar, pepper, star anise); cover the pot and simmer for 20 minutes (note: after boiling, simmer on medium and low heat, the fish does not need to be turned during the stewing)
Tips:
Be sure to add white wine, sugar, vinegar and ginger to remove the fishy (white wine can be replaced by cooking wine)!
