Homemade Sour and Spicy Eggplant

Dried shallots, chopped, set aside.

Garlic, chopped finely, set aside.

Cut tomatoes into small pieces and set aside.

Cut the chili into small pieces diagonally and set aside.

After washing the eggplant, break the small pieces by hand and set aside.

In a cold pan without oil, put the eggplant on a low heat, sprinkle a small amount of salt on the eggplant, and stir-fry until the eggplant is softer. This can reduce the oil absorption of the eggplant.
