Hot and Sour Noodles

Prepare ingredients: vermicelli, peanuts, soybeans, greens, coriander, ginger, garlic, spicy millet, fresh chicken juice;

After washing the ginger and garlic, chop finely; chop the spicy millet and coriander;

Heat the pan with cold oil, pour peanuts, soybeans and fry until fragrant;

Remove the fragrant fried peanuts and soybeans for later use; take a clean empty bowl and mix in an appropriate amount of spiced pepper, vine pepper oil, minced ginger, minced garlic, vinegar, sugar, light soy sauce, and salt and mix well;

Add water to a boil in a boiling pot, add the vermicelli, blanch the vegetables and remove them;

Put vermicelli, greens, and fresh chicken sauce in the bowl;

Pour the soup of boiled vermicelli;

Put in the fried peanuts and soybeans;

Add the sauce prepared in step 4;

Add millet for spicy and coriander.
Tips:
1. The vermicelli I bought is cooked and can be eaten after boiling, so there is no need to soak the hair in advance, and it does not need to be cooked for too long;
2. The broth in the hot and sour powder can be used in broth; if there is no broth, you can use fresh chicken juice + boiled hot and sour powder in the soup, the taste is also very good;
