Lamb Chops in Clear Soup

Wash the lamb chops and put them in a large plate to soak for half an hour, changing the water once in between.

These are put in the soup pot, just slice the ginger, peel the garlic, and crush the peppercorns with the back of a kitchen knife.

Boil water in a pot, drain the lamb, add bay leaves and peppercorns.

After the water is boiled, there is a lot of scum. Use a spoon to remove the scum.

Look, the soup is relatively clear after the froth is removed, and blanch for 5 minutes.

After removing it, rinse with cold water to remove any scum on the meat.

Remove and drain the water.

Pour into a large casserole saucepan, add sliced ginger, garlic (whole) and peppercorns.

After cooking for an hour, add the yam cubes and carrot cubes, cover the pot, and continue to cook for half an hour.

The soup is boiled slowly, prepare some ingredients for dipping in water, such as spicy millet, garlic, coriander, shallots, and ginger.

Cut all the ingredients and put them in a small bowl, add a little salt, sugar, chicken essence, and pour the boiling hot oil on top.

After drizzling with hot oil, add a tablespoon of light soy sauce, a little chicken bouillon, a spoonful of chili and sesame sauce (you can use chili sauce if you don’t have chili and sesame sauce), a teaspoon of vinegar and a spoonful of lamb chop soup, and stir well.

Boil the soup over a low heat for an hour and a half (the lamb chops are boiled for an hour and then add yam carrots and boil for another half an hour), add a little salt to adjust the taste and turn off the heat.

The lamb chops are smooth and tender, the meat is rich, the yam is soft and the carrots are sweet, the soup is clear but the taste is mellow and peppery, adults and children like it.
