[lazy Kitchen] Parent-child White Jade Onion
1.
Wash white round onions and cut into wide strips soak in water to remove the spiciness.
2.
Wash the chicken breast and cut into thick slices. You must carefully clean up the chicken breast, as some deboning will leave bone residue if it is not clean.
3.
Put the cut chicken pieces into a bowl and stir in a little oil.
4.
Put a little five-spice powder, a little soy sauce, a little cooking wine into the roughly stirred chicken, and add about 5 grams of starch, and mix well. Do not omit this step, otherwise the dry-fried chicken will affect the taste.
5.
Put one egg into a bowl and stir into egg liquid. The maximum recommended amount for an adult is 2 eggs a day, so you can eat good things, but don't eat more.
6.
Pour an appropriate amount of cooking oil into the pot, and pour in the egg liquid when the oil temperature rises. After the egg whites are denatured, use a spatula to flip 2-3 times. Be careful not to stir too frequently, the eggs will be very broken and affect the appearance.
7.
After the eggs are formed, serve them on a plate for later use.
8.
Add a little oil to the pot and stir-fry slightly marinated chicken.
9.
After the chicken changes color, pour the soaked green onions and continue to fry.
10.
Add 3 grams of salt and 3 grams of sugar when the shallots are fragrant. Salt and sugar are just right, don't put too much. After stir-frying a few times, reduce the heat and pour a little water into it and simmer for a while. Note that a little bit of water is enough, so that the green onions are softer and not dry.
11.
After seeing the green onions become transparent, pour in the eggs and turn on high heat to collect the juice.
Tips:
Eggs will produce fresh-enhancing substances when heated, so MSG can be omitted for dishes with eggs.
The chicken is marinated with light soy sauce, not colored soy sauce.
When frying onions, put a small amount of sugar, and don't put it together with refined salt. Put salt and stir fry first, then add sugar.
