Lentil Braised Noodles

Pick and wash the lentils, cut into small pieces diagonally

The noodles are pulled into palm-length sections.

Mince green onion, ginger, garlic

Plum meat slices

Add light soy sauce, dark soy sauce, salt, pepper, starch and a small amount of water to the meat.

Heat the pan with cold oil, sauté the aniseed petals on low heat

Add the chopped green onion and ginger and stir fry for the aroma, pour in the meat slices and stir fry, cook with cooking wine and dark soy sauce and stir fry

After the meat slices change color, pour in the beans, add salt and stir to accompany

Add the boiled water over the beans

After the soup is boiled, half of the soup is filled with a spoon, and the middle of the beans is pressed down by one spoon high, so that the beans are high on all sides in the pot and low in the middle.

Spread the noodles evenly and loosely on the beans, cover with a medium heat and simmer for 7 or 8 minutes

After 7 or 8 minutes, turn the noodles upside down, that is, turn the bottom surface to the top, and pick the top surface to the bottom. Pour the soup just scooped out evenly on the noodles, pick it loose with chopsticks, cover and simmer for 6 or 7 minutes.

During the noodle stew, make a small amount of ingredients, add minced garlic, a little vinegar, sesame oil, and a spoonful of water to the bowl and mix thoroughly

After the noodles are simmered, pour in the spare sauce when boiling, and use chopsticks to mix the noodles and the following dishes evenly.
Tips:
1. To fry the meat, heat the pan with cold oil, that is, the hot spot in the pan and then pour the oil. The oil is 40% hot and then stir-fried the meat slices, so that the meat slices will be tender;
2. The water added to the beans can be less, and it can be equal to the beans.
