Cut the meat into pieces.

Add cooking wine, salt and marinate for 5 minutes. Add eggs and starch.

Grasp it gently and hang the paste.

Boil the oil to 50% heat, add the meat section, and fry until cooked.

Remove and set aside.

Turn on high heat and heat the oil to over 80% heat. Re-fry the meat a second time, and fry until the outside is charred and the inside is tender.

Remove the fried meat and set aside.

Dice the green onion, ginger and garlic.

Mince coriander.

Heat oil in a pan and sauté the onion, ginger, garlic.

Cook soy sauce.

Add fresh soup. You can use clean water.

After the soup is boiling, add the fried meat. Simmer over low heat for about 2 minutes. Pour in sesame oil and vinegar, and quickly get out of the pot.

Tips:
1. The practice of most of this dish is to add the soup and steam for more than 20 minutes after the meat is fried. Then decan the soup, pour it into a pot and boil, season it, and pour it on the meat.
