Noodles with Meat Sauce

Prepare ingredients: wash the beef with blood and cut into finely minced diced meat; cut the mushrooms into small particles; chop the shallots and chopped green onions; mince the ginger. Cut cucumber and carrot into thin strips, and cut coriander into sections.
Heat oil in a wok, with more oil, add ginger and stir-fry until slightly charred

Put the beef and stir fry to change its color (the beef has more blood, so it must be washed thoroughly, otherwise it will cause bleeding when frying)

After the beef has changed color, add chopped green onion, add 1.5 tablespoons of cooking wine, 1.5 tablespoons of light soy sauce, 1 tablespoon of soy sauce (color enhancement), 2 grams of pepper powder, 1 gram of white pepper and stir fry for a fragrance

Pour in the diced shiitake mushrooms and fry until the shiitake mushrooms become soft

Pour in soybean paste, add appropriate amount of water, stir until the water and sauce are fully integrated

Add a pinch of salt. There must not be less salt here, adding a little salt can stimulate the flavor of the sauce

After adding the sauce, adjust the heat to low, let the sauce slowly slur out the sauce aroma, and let the flavor of the seasoning and the sauce fully blend, remember to keep turning it to prevent the pot from getting stuck.

It takes about 7-8 minutes to slurp, and you can smell the strong aroma of meat sauce.

Boil the noodles in cold water, put them in a large bowl, put your favorite side dishes and meat sauce (I put cucumber shreds, carrot shreds, coriander, and shallots)
Tips:
Don’t worry about the time of frying the sauce, the low fire will slowly simmer the aroma of the sauce, so that the fried meat sauce will be more delicious
