Oily Noodles

Prepare 400 grams of flour.

Sprinkle in a small amount of salt.

Add water one after another to knead the dough into a moderately hard and smooth dough.

Stamp the system for 20 minutes.

Prepare chopped green onions, chopped ginger and vegetables.

Put the dough on the chopping board and continue kneading.

Knead into a thicker dough.

Pull into noodles of uniform size.

Rub the dough into a long strip.

Brush the oil.

Cover with plastic film and leave for 15 to 20 minutes.

Brush a small amount of oil on the chopping board, take out a strip of dough, and gently roll it into a thicker long piece.

Press in the middle, and then gently stretch to double.

Make dough slices continuously.

Slowly stretch the dough sheet with both hands.

Swing up and down, pulling long noodles.

Fold the long noodles and tear them apart from the middle. Pull the other dough pieces one after another.

Put it in a pot of boiling water and cook for about 3 minutes.

Put salt in the bowl.

Put light soy sauce and balsamic vinegar.

Put the mashed noodles into a bowl.

Put green onion and ginger.

Put the spicy noodles and pour the hot oil on the spicy noodles.

Tips:
All the above seasonings are prepared with 400 grams of flour. If the amount of flour is reduced, the seasonings should be reduced in proportion. Only part of the demonstration in the figure is for reference.
