Although both parents are authentic southerners,
But they both like to eat hand-rolled noodles, and they both say they are incomparable to the noodles bought outside, and they are particularly fragrant.
Wu Nai is usually very busy, and it is difficult to make noodles personally all year round.
So every time I come back for a short stay, I will make hand-made noodles or dumplings for them to eat.
But because I didn't prepare this time, I didn't have any side dishes at home, so I made this simple version of oiled noodles.

Oily Noodles

1. Pour the flour into the container, add some salt and mix well

2. Slowly add water, use chopsticks to beat it into a fluff, then knead it into a harder dough, cover it with a damp cloth for an hour or two

3. Knead into a smooth dough

4. Take a small piece of dough and roll it into a dough

5. Sprinkle flour on the surface of the dough, fold it and cut into strips

6. Shake off

7. Boil an appropriate amount of water in the pot, add a small amount of salt after the water is boiled, and put the noodles into the boil

8. Put the chili powder, salt, and minced garlic in a container

9. Boil a proper amount of oil in the pot

10. Pour the hot oil into the chili powder container, add appropriate amount of soy sauce and mix well.

11. Pass the boiled noodles in cold water, add a small amount of oil and mix well, drizzle with chili oil, and sprinkle with crushed peanuts.

Tips:

1. When kneading the noodles, don't add too much water at once, but slowly, try to knead the dough harder, so that it will be easier to handle later and the noodles will be stronger.
2. The final side dishes can be added according to personal preference.
3. The cooked noodles will have a better taste after being treated with cold water.
