Potato Shreds with Pepper

Wash the potatoes, peel them, and rinse them with clean water.

Cut the potatoes into thin shreds. Don’t praise the shreds I cut. They were wiped with a vegetable grater.

Soak the cut potato shreds in light salt water to wash away the excess starch.

Shred the peppers, red cabbage, and carrots.

Put water in a pot and boil. After the water is boiled, add the potato shreds and blanch them.

Hot peppers, red cabbage, and carrots are blanched and cooked.

Put oil in the pot to heat up, turn off the fire and add the pepper and chili to fry to create a fragrant flavor.

Put light soy sauce, sugar, vinegar, and appropriate amount of salt on the potato shreds. Pour the fried chili oil on the potato shreds, then add a few drops of sesame oil and mix well.
Tips:
Fry the pepper oil, heat the oil, remove the fire immediately after a bit of smoke, then add the pepper and chili, so that the pepper will not be fried due to the noodles.
