Potato Stew

Wash the rice and soak it in the electric rice cooker for 15 minutes. After soaking, it will be softer. It depends on your personal taste. You don’t need to soak if you don’t like rotten ones.

Peel the potatoes and soak them in water.

Cut the potatoes into small pieces, not too big to avoid undercooking.

Prepare green onions, ginger, and garlic, and chop them into froth.

Cut a few slices of fat and lean pork belly.

Put oil in the pan, and fry the pork belly when the oil is warm.

Fry the pork belly until light brown on both sides, adjust to medium-low heat and add soy sauce.

Immediately pour the green onion, ginger, and garlic and stir fry for 30 seconds.

Add the bean paste and stir-fry evenly.

Then immediately filter out the water from the potatoes, pour in and stir-fry. After 1 minute, add salt and pepper and continue to stir-fry for 30 seconds and turn off the heat.

Put the potatoes in the rice cooker soaked in rice, cook the rice as you would normally cook rice, and simmer for 10 minutes after the rice is ready.

After the meal is complete, stir the rice well and it is ready to eat.

Tips:
Be sure to turn down the heat when adding soy sauce, otherwise the pork will be mushy. Potatoes should be soaked in water to prevent oxidation. You don't need to put water in the process of frying potatoes, because the potatoes will contain water after soaking.
