Potato Stew with Kidney Beans

First pinch off the kidney beans on both sides and break them directly into a big break.

Wash.

Peel and wash potatoes.
4.
Cut into small pieces and soak in clean water for later use.

Cut the pork belly into large slices and shred the ginger.

Prepare an iron pot, add vegetable oil to the pot without water.

Add pepper and ginger and stir fry until fragrant.

Just add a piece of star anise, but be careful not to fry the star anise.

Then add pork belly.

Add a few drops of light soy sauce, stir-fry the pork belly until the color changes.

Add kidney beans.
12.
Add another spoonful of light soy sauce.

Stir-fry evenly over high heat and fry the moisture that has been brought in.

Then drain the potato pieces and add them.
15.
Stir evenly over high heat again.

Add 2 bowls of water.

A teaspoon of salt.

Stir fry again evenly.

Then spread the vegetables flat, cover and turn to a low heat to simmer.

About 15 minutes or so, open the lid and add most of the green onion, then add a small bowl of water, turn to high heat and stir fry a few times to collect the juice. When the soup is running low, cover the pot again and turn off the heat.

Don't open the lid immediately after turning off the heat. Use the remaining heat to simmer for 3-5 minutes.

Finally, put it on the plate and sprinkle with the remaining scallions. This simple home-cooked dish is complete. A bowl of rice is superb.
Tips:
Be sure to fry the beans. Taste them when you think they are almost ready. Check the heat before adding the ingredients. If the beans are not fully cooked, eating them will cause poisoning!
