Guokui is a very distinctive traditional snack. At first it was white noodles, and then slowly developed salt and pepper, minced meat, brown sugar and various fillings. The name Guokui sounds like a lot of weight. However, it looks the same with buns, naan, sesame seed cakes...are you stupid to distinguish it?

Today, I will make a family version of plum dried vegetable panguu, a snack that is very suitable for making at home, with a bowl of broth, it is not to mention more pleasant to eat!

1. Dried plums are soaked in water for 1-2 hours, during which time the water needs to be changed to remove impurities, and then the water is squeezed out by hand, and then cut into small dices for later use.

2. Chop pork belly into minced meat, add five-spice powder, pepper powder, chili powder, light soy sauce, salt and stir well. (The addition of seasoning can be adjusted according to your favorite taste.)

3. Add dried plums to the minced meat and stir evenly.

4. Make pastry: Add lard, five-spice powder, pepper powder, chili powder, and salt after the pot is heated. Stir the lard on a low heat to melt.

5. Add flour.

6. Stir-fry until there are no grains and serve.

7. Make sourdough: add 160 grams of all-purpose flour, 1 egg, 2 grams of yeast, and 80 grams of warm water.

8. Stir well and knead into a smooth dough, then cover with a damp cloth or plastic wrap, and place in a warm place to proof until it doubles in size.

9. To make hot noodles: add 80 grams of all-purpose flour, 10 grams of edible oil, and 70 grams of boiling water.

10. Stir it with chopsticks to form a dough, cool it slightly and close it with your hands until it is smooth, cover it with a damp cloth or plastic wrap, and let it rise for about 15 minutes.

11. After the aging and perming surface are proofed, knead the two kinds of dough together.

12. Knead for a while and knead the dough evenly.

13. Divide the dough into small doses of about 70 grams.

14. Use a rolling pin to roll out a long strip.

15. Brush with some shortbread.

16. Roll up from one end.

17. Then tighten both ends, then squeeze it, and roll it into a thick piece.

18. Wrap a tablespoon of dried plum and vegetable mince.

19. Tighten and squash at both ends.

20. Then roll it into a big oval slice (roll out as thin as possible, so that it will be crispy.)

21. Finally, sprinkle some cooked white sesame seeds.

22. Line the baking tray with greased paper and place the cakes. Preheat the oven up and down to 220 degrees and bake for about 25 minutes.
