Purple Potato Egg Cake

Prepare eggs, purple sweet potato, flour

Peel the purple sweet potato.

Cut into small pieces. Put it in the microwave and turn the heat on for five minutes.

Beat the eggs.

Add flour to the egg mixture, add a little water, and mix well.

After turning the purple sweet potato, use a large spoon to press it into purple sweet potato mash.

Pour the mashed purple potato into the egg and flour and stir well.

Stir evenly, slowly pour it into a non-stick pan and turn on a low heat. Fry until set, turn over and turn on low heat.

Both sides are slightly yellow and cooked.
