Quick Pickled Eggplant

One eggplant, two vitex roots, wash

Cut the eggplant into thick strips, and chop the two vitex

Add salt and mix well, marinate for 10 minutes, I just grab it with my hands

After 10 minutes, the eggplant becomes soft and slightly watery. Squeeze the water from the eggplant without squeezing it dry.

Add the light soy sauce and sesame oil and mix well, because the light soy sauce is salted beforehand and the light soy sauce is also salty, you don’t need to add salt, you can add some vinegar yourself
Tips:
If you like others, you can add other seasonings yourself. I like the simpler ones
