Quick Scallion Lo Mein

Wash the shallots and chop them.

Put chopped green onion, homemade sour ginger, light soy sauce, sesame oil, and a little salt in the noodle bowl. The seasoning is up to your liking, and you can use mustard and dried radish. Add some vinegar.

After the water is boiled, scoop a little boiled water to wash down the seasoning.

Add the dried noodles.

The noodles are cooked until there is no white heart, and can be easily cut off with chopsticks.

Transfer the noodles into a bowl and mix well.
Tips:
1. Get up to boil water first, then brush your teeth and wash your face, saving time. If you want to add an egg, you can wash it and cook it in a pot under cold water.
2. The seasoning is up to your liking. If you want to add meat or something, prepare it one night in advance, and it's best to cook it first. Or get some meat sauce for later use.
3. Cook the noodles until the chopsticks can easily snap off.
