Roasted Pork with Bamboo Shoots

Fresh bamboo shoots need to be soaked in water to remove the astringency.

I bought elbow meat. The skin was shaved and the fur was plucked clean, and then cut into small pieces for later use.
Cut the bamboo shoots into small pieces, put a pot of water and some salt to boil, put the bamboo shoots in and cook, and then put the shiitake mushrooms to soak.

Rinse the bamboo shoots and drain the water.
Cut the soaked shiitake mushrooms in half.
The garlic is slapped flat.
Break the dry chilies.
Scrape and wash the ginger and pat flat.

Put oil in the pan, and fry the dried chili, garlic, and ginger until fragrant.

Put the pork in and stir fry.

The meat is fried a bit dry and put two spoons of Haitian Zhuhou sauce.

Add two drops of Haitian soy sauce, one spoonful of salt and one spoonful of Haitian golden soy sauce, and stir fry.

Pour in the bamboo shoots and fry them.

Then pour all the ingredients into the pressure cooker, cook until the pressure cooker rings for 5 minutes, then turn off the heat, and then open the lid after applying pressure.

Pour into the wok and put a little chicken bouillon, and then collect the dry juice to get out of the pan.
