Roasted Pumpkin with Minced Meat

Prepare a piece of pumpkin, half a small bowl of chopped fat and lean minced meat, 3 scallions, and a small piece of ginger. You can chop the minced meat yourself, or you can buy it from the store.

Peel off the outer skin of the pumpkin, remove the inner flesh, wash it in water, and then place it on the cutting board and cut into 0.5-thick pumpkin slices.

The white onion and the green onion leaves are sliced separately. The white onion can be fried with the minced meat to remove the smell. The green onion leaves can be put before the final pan to enhance the fragrance and color. Cut the ginger into ginger rice and set aside.

Put a little oil on the bottom of the pan to moisten the pan. After the pan is hot, add the minced meat and stir fry to get the oil out. Put a little oil into the pan in advance so that the meat will not stick to the pan when frying. In the process of frying minced meat, add a little cooking wine and stir fry to get rid of the fishy. After the minced meat is stir-fried to get the oil, add the scallion white and ginger rice to fry the aroma.

After the green onion and ginger are fragrant, add the sliced pumpkin and stir fry a few times, then pour in half a bowl of water and boil.

Season with a teaspoon of salt and half a spoon of light soy sauce, close the lid, and cook the pumpkin over medium-low heat. This process takes about three minutes.

After three minutes, open the lid and use chopsticks to grab a piece of pumpkin and try it. If the pumpkin is cooked, sprinkle with chopped green onion leaves and stir evenly to get out of the pot. If it is not cooked, continue to cook for another minute or two.
Tips:
1. Don't put too much salt when cooking pumpkin. A lighter salt is easier to highlight the sweetness of pumpkin.
2. When cooking the pumpkin, don't burn the pumpkin too well, so that the chopsticks will not be easy to pick up when eating.
