Roasted Trotters

Boil the trotters first, prepare a large pot of cold water and boil the trotters together

Rinse it with hot water. You can also check that there is no clean hair on the trotters while it is hot.

Cut the trotters into small pieces with a knife

Prepare a soup pot, heat the oil on a low fire, add a small spoon of rock sugar, and fry the sugar until golden brown, which is the color of the fried sugar in the chef’s mouth

After the sugar is ready, put the trotters, stir fry so that the sugar covers the trotters, stir fry the trotters, and color the trotters

Pour all the prepared spice packets into the pot, and add the water to submerge the trotters after a simple saute

Add light soy sauce, cooking wine, oyster sauce, ginger, and shallot knots. After boiling, taste the saltiness of the brine. Normally, it needs to be a little bit saltier than the fried vegetables, so that the trotters will have a better taste. Simmer for 2 hours , The skin of the pig’s feet can be easily pierced in (if there is enough old brine in the house, you can also use all the old brine)

If you use the oven, put the trotters directly on the baking tray lined with greased paper, and poke many small holes in the trotters with a toothpick before roasting.

Sprinkle with cumin powder and chili noodles according to your preference, because the pig's feet are marinated and have been seasoned, so there is no need to add additional salt when roasting

Put it in the preheated oven and bake at 200°C for 10 minutes, and you are ready to eat

If you use an electric oven, you also need to poke holes in the pig skin with a toothpick. If you like the sweet and spicy taste, you can make the barbecue material written in the previous ingredients first, mix honey + Korean hot sauce and brush on the surface of the trotters, then sprinkle some chili noodles and cumin powder
Tips:
1. Generally, if you buy pig trotters at a butcher shop, you can ask the boss to chop a few knives for you first, so you only need to cut into sections when you go home. It is not recommended to use a good knife to chop the pig bones directly, which will damage the blade;
2. Stir-fried rock candy is because using sugar to color the meat will look better than directly using soy sauce to color the color, and the taste is more fragrant, and it will be sweet;
3. The recipe of the brine is similar to the beef sauce recipe I have made. After each use of the brine, filter it with a muslin cloth and store it in the refrigerator. Heat the brine every time new ingredients are brined, and then add some star anise cinnamon fragrant leaves. You can continue to use it. You can use the brine that has been marinated for meat, and the daily cooking of noodles and braised pork rice, etc. can be used;
4. Poke the pig's trotters to help the fat on the pig's skin escape during the roasting process, so that the roasted skin will be more crispy;
