Change the order this time and make the scallion oil first. The green onions grown by myself are thick and a bit old, so they are not suitable for scallion, but are most suitable for scallion oil. Heat the pot, put the green onion leaves in cool oil

Slowly fry on medium-low heat until the green onion leaves are browned and black. Remove the green onion leaves and discard.

Pour the scallion oil into the salted flour while it is hot, and stir it evenly to form a thin shortbread. The consistency is similar to that of yogurt. I use soybean oil, so the color is darker

Take the flour and add some salt to increase the gluten. Half of the flour is used to scald the noodles with boiling water, and the other half of the flour is mixed with cold water to form flocculent

Knead it into a smooth and soft dough. The kneaded dough has the fragrance of green onions. For more than half an hour, I prepared the dough in advance for the convenience of making it and kept it in the refrigerator overnight.
