Scallion Finger Cake

1. Change the order this time and make the scallion oil first. The green onions grown by myself are thick and a bit old, so they are not suitable for scallion, but are most suitable for scallion oil. Heat the pot, put the green onion leaves in cool oil

2. Slowly fry on medium-low heat until the green onion leaves are browned and black. Remove the green onion leaves and discard.

3. Pour the scallion oil into the salted flour while it is hot, and stir it evenly to form a thin shortbread. The consistency is similar to that of yogurt. I use soybean oil, so the color is darker

4. Take the flour and add some salt to increase the gluten. Half of the flour is used to scald the noodles with boiling water, and the other half of the flour is mixed with cold water to form flocculent

5. Add 1 tablespoon of scallion oil that was just made and warmed up

6. Knead it into a smooth and soft dough. The kneaded dough has the fragrance of green onions. For more than half an hour, I prepared the dough in advance for the convenience of making it and kept it in the refrigerator overnight.

7. The next morning, take out the dough from the refrigerator, knead it for a while, knead the strips, add the ingredients, and knead and flatten them one by one.

8. Roll out the noodles into long strips, as thin as possible

9. Spread a layer of shortbread (the shortbread was also made in advance last night)

10. Sprinkle with shallots

11. Fold the upper and lower sides to the middle

12. Stretch again

13. Start from the beginning

14. The tail presses down

15. Do them in turn, cover with plastic wrap and relax for a few minutes

16. Roll out

17. Fill the pot with oil to heat up, lay the cake embryos, and brush the surface with oil

18. Because it is semi-hot noodles, it is easy to cook, just fry on medium heat. Fry it until golden and turn it over

19. Fry on both sides until golden

20. The fried cake is squeezed into the middle while it is hot to promote layering

21. The finished product is quite delicious

22. Soft and multi-layered, it is not inferior to the hand cakes sold, and the oil for home use is safe, and it is not as greasy as the sold ones.
