Scallion Fried Rice with Egg

Prepare rice with less moisture in advance

Tips:
1. Do not beat the spare eggs well, otherwise the aroma will be lost and the fishy smell will become heavier.
2. If the rice is fresh, you can use the oven to bake it slightly to bring out the moisture, which is cleaner and hygienic than the overnight rice.
3. The salt should not be too much or too little. The salt must be added carefully. The proportion of salt in this dish is very important.
