Scallion Noodles

1. Prepare the ingredients, if you don’t have any chives, use chives instead

2. Peel the shallots, wash and slice

3. Choose lean pork, separate the fat and the thin, and shred

4. Put vegetable oil in the pot

5. Pour shredded green onions into a pot and fry on medium-low heat

6. Fry until the shallots are browned and then pick up and discard

7. Scallion oil for use

8. Leave a small amount of scallion oil in the pot, change the fire and put the fatter meat into the pot to squeeze the oil

9. Put lean meat

10. Stir fry until white

11. Add light soy sauce, soy sauce, sugar, rice wine, and some water to make a juice

12. Multiply the cooked meat and juice for later use

13. Put the noodles in a pot and cook, add salt to taste

14. Take out the cooked noodles, drain the water, add a spoonful of scallion oil, mix the noodles well, and drizzle the soy sauce with shredded pork, sprinkle with scallions, fried peanuts and carrots.

Tips:

1. When frying scallion oil, be sure to low heat, you can also use small scallions;
2. After the noodles are cooked, they must be drained and mixed with scallion oil.
