Sesame Paste Biscuits

Stir the flour with yeast, add warm water to form a dough, the dough should be softer, and ferment for 1 hour;

Mix the sesame paste, sesame oil, salt, and five-spice powder to make the sesame paste fluid. If the sesame paste is dry, add more sesame oil to dilute;

The dough does not need to be fermented to double its size, just slightly larger by 1.5 times;

Knead the dough smoothly and divide it into 8 parts, knead each into a round shape, take a small dough and roll it into a thin round sheet, and spread a layer of sesame paste evenly;

Then roll it up and pinch the opening. This is the case for other doughs. Be careful to cover the dough with plastic wrap to prevent it from drying out;

After the 8 pieces are rolled, start from the first one, press and roll it into a long strip, and then apply a layer of tahini; then roll it up again, pinch the mouth on both sides, put it upright, and press it upright;

Press the cake base into a cake with a diameter of about 7 cm by hand, and then use a small brush to apply a thin layer of honey water;

Put the biscuits with honey water down on the sesame seeds, press it slightly with your hand, and pick it up;

Place the sesame-sticky side up on the baking tray. Before baking the sesame seed, let the sesame seed ferment for another 30 minutes, so that the baked sesame seed is very soft;

After preheating the COUSS E3 oven at 180℃, put it in, bake for about 20 minutes, until the surface turns yellow and crispy, then it can be out of the oven.
Tips:
1. 200 grams of flour can be made into 8 pieces. I think the size is just right. The amount of water is not indicated. Chinese-style pastry does not need to be too concerned about the amount of water. Add it slowly and knead it into a soft dough that is slightly soft but not sticky. Reference amount 130 grams;
2. In the spread, if the sesame sauce is too thick or too dry, add sesame oil to blend until it is smooth and slightly fluid, but it should not be too thin. Try the five-spice powder for your own taste. You can also add salt and pepper or pepper. A small spoonful of salt, taste the sauce for a little salty taste.
