Shiitake Mushroom and Pork Seed Sour Noodle Soup

Prepare the ingredients;

Soak the shiitake mushrooms in advance;

After washing clean, drain the water and cut into cubes for later use;

Wash pork and chop into minced meat, add 2g balsamic vinegar, 5g light soy sauce and marinate for more than half an hour;

Take a bowl, pour 30g balsamic vinegar, 15g light soy sauce and stir evenly for later use;

After heating the pan, pour in a proper amount of vegetable oil, pour in the marinated minced meat and stir-fry until the color changes, then pour in the shiitake mushrooms and fry together and serve for later use;

Pour the balsamic vinegar light soy sauce mixture in step 5 into the hot pot, add some hot water and simmer for 5 minutes;

Pour the boiled sour soup into a noodle bowl, add a small spoonful of red oil;

Sprinkle a little more cooked white sesame seeds and stir evenly;

Put an appropriate amount of water and salt in another pot to cook the noodles. Add cold water 2-3 times during this period, so that the noodles will be more vigorous;
11.
Remove the noodles and put them in the sour soup;
12.
Pour in the fried shiitake mushrooms and sprinkle with chopped green onion.
Tips:
1. The Golden Arowana + Ao Mai oval noodles are very strong in themselves, so you don't need to add cold water many times when you cook the noodles;
2. Aumai noodles take a little longer to cook than ordinary dried noodles. The recommended time is 6-7 minutes. If you like to eat softer noodles, you can increase the cooking time appropriately according to your personal taste;
3. Don't add red oil if you don't like spicy food.
