I bought some seafood before May Day and prepared some side dishes for a holiday gathering with friends. Tips;

1. Fresh squid should be used to make this dish, and the texture and taste of dried squid in water are not ideal.

2. The minced garlic, chopped peanuts and cooked sesame seeds are used to increase the fragrance, so do not fry the minced garlic, otherwise it will have a bitter taste, just fry until slightly yellowed.

3. When frying, the oil temperature should not be too low. 60% of the hot oil temperature is the best. Use bamboo chopsticks to insert into the oil to produce fine bubbles, which proves that the oil temperature is right at this time. Fried.
